Our Favorite Valentines Dinner Menu

Our Valentines Day is usually pretty simple....in fact most years we celebrate the day after because the candy goes on sale! When we do get around to celebrating Valentines there are TWO things we need

1. Chocolate - Molten Lava Cake
2. Quality Meat - Marinated Cottonwood Pork Chops

That's all we really need! ...... Oh yeah, and a veggie or two as a side. Enjoy these two recipes with your LOVEY!

Molten Lava Cake

Ingredients 

  • 2 eggs
  • 1/4 cup sugar

Instructions 

  • Preheat the oven to 450°. Butter and lightly flour four 6 oz ramekins. Tap out the excess flour. Set the ramekins on a baking sheet.

  • In a double boiler, over simmering water, melt the butter with the chocolate. In a medium bowl, beat the eggs with the egg yolks, sugar and salt at high speed until thickened and pale.

  • Whisk the chocolate until smooth. Quickly fold it into the egg mixture along with the flour. Spoon the batter into the prepared ramekins and bake for 12 minutes, or until the sides of the cakes are firm but the centers are soft. Let the cakes cool in the ramekins for 1 minute, then cover each with an inverted dessert plate. Carefully turn each one over, let stand for 10 seconds and then unmold. Serve immediately.

 

The batter can be refrigerated for several hours; bring to room temperature before baking.

These chocolate cakes are easily one of the BEST Valentines Day Desserts: simple, sexy and indulgent.

Perfectly Marinated Pork Chops

Dales used to be one of my favorite marinades of all time -- until I took a look at the label

Soy Sauce (Hydrolyzed Soy Protein, Water, Salt, Corn Syrup, Caramel Coloring), Onion, Garlic, Sugar, Monosodium Glutamate (MSG), Ginger & Paprika.

It contains 50% of your daily sodium as well as MSG. It also contains industrial caramel color and high fructose corn syrupI came up with this recipe in an attempt to be more ion control of the sodium going into it, but I'll be honest with you, it's even better than Dales recipe.
