Easter is right around the corner. With a rainbow of assorted colors of eggs our ladies lay, I don’t need to do any dying or coloring to make Easter decorations. But in order to display them on the table for years to come I usually blow out the interior of the eggs.... I decided the easiest way to cut those carbs in the morning was to plan ahead and make these delicious egg muffins ahead of time.
Boiling pastured eggs can be difficult. The eggshells often won’t come off very evenly and it leaves your a boiled egg looking like you ran it through the paper shredder. They just seem to stick like glue to the egg for some reason.
